Monday Meal Plan: January 11th - January 17th

What a fun and busy weekend!  Hubby and I had a quick over night get away to celebrate a dear friend's 40th birthday.  His wife can throw one heck of a party!  And I learned that I can not bounce back from a late night like I used to when I was younger.  I really wanted to Christmas down and completely forgot until I was heading to finally sit down Sunday afternoon.  I turned and saw the tree and tackled taking down Christmas at 5:30 in the afternoon.  I know you guys understand that sometimes you just have to sacrifice something you want to do for something you have to do.  My girls and I had a fun time though!  As a thankful for being so understanding that this blog post is being delivered to you late, I have added in two lunch ideas.




Here is what we are having for dinner this week:


Monday: Ham Steaks, Green Beans/Aspragus and Sweet Potatoes
Tonight I am tasting how good and fast frozen vegetables can be.

Tuesday: Sloppy Joes

Wednesday: Chicken Parmesan Meatball Casserole

Thursday: Date Night In: Gnocchi with Spinach and Pine Nuts

I'm using walnuts because they are better on the budget; even thought I LOVE pine nuts.

Friday: Happy Birthday Hubby!!  Take out  Made at Home: Fried Rice
This is my recipe.  One of my husband's favorites.  Warning: Not 21 Day Fix Approved but with a few tweaks it easily could be.

Saturday: Pats are in the Playoffs.  Buffalo Wild Wings to watch the game and celebrate hubby's birthday.

Sunday: Cuban Pork and Black Bean Melts

Bonus Lunch Ideas:

Slower Cooker Chicken and Black Beans taco filling on a salad.  I made just the chicken portion of this recipe to change up my salad protein topper this week.

Meal Plan Monday: October 26th - November 1st

I can't believe I just wrote November.  The crazy holiday season is upon us.  We are looking forward to celebrating Halloween this year! It's always nice when it ends up on a weekend.  We have a tradition of picking up a Jack-o-Lantern pizza from Papa Murphy's on Halloween.  Do you have a tradition for Halloween?

Meal Plan Monday: September 14th - September 20th

How is September half way over?  The only positive thing about that is that we are getting a hang of the school year.  Did you celebrate the start of the football season this week?  The buffalo wraps and cauliflower bites were perfect for watching the game.

Meal Plan: August 2nd - August 8th

My girl's are back home!  It was nice to spend some one on one time with hubs but I love having the girls in the house.  It's so lively.  So much fun craziness and laughter.  My Fixate cookbook came after they left to visit their grandparents so I brought it with me.  My girls have been on the 21 Day Fix journey with me since day 1.  They are big Autumn Calabrese fans so I wanted to keep them on the journey with by helping me meal plan with their favorites from the book.  This cookbook is awesome!  I haven't even tried the snacks yet!!

This is what we are having for dinner this week:

Sunday:  We ordered pizza after a long drive home

Monday:  Grilled Cheese and Tomato Soup
We are going to need a quick dinner after some after work grocery shopping and other appointments.

Tuesday: Breakfast for Dinner - Chicken and Waffles
When I told Hubs that it was rumored that the new cookbook was going to have a chicken and waffles recipe he was in.  Never did I think my 9 year old would be all over it too.  She made us wait until she got back to make this recipes.

Meal Plan: March 15th - March 21st

Happy Saint Patrick's Day!  There is usually some protest from my Scottish husband on this holiday.  The girls and I usually hear that we should be wearing orange as we are not Irish.  He doesn't seem to mind the food or the Guinness beer, for that matter.

Here is what we are having this week:

Sunday: Sloppy Joes, Cole Slaw and Potato Chips
This Sunday we cooked for our church's Youth Group.  I kept it simple and just used Manwich instead of a homemade recipe.  Though Skinny Taste does have a good one. I channeled my inner lunch lady and even served them with an ice cream scoop.  Side note: Six pounds of ground beef was plenty for our group, about 30 people.
How do you eat your Sloppy Joes?  I put the cole slaw and potato chips on top.

Monday: White Cheddar & Chive Potato Soup in a Bread Bowl AKA Copycat Panera Bread at home.

This is the fifth year my Sunday School has come together to make this meal. The soup always gets rave reviews.

Meal Plan: December 14 - December 20

This meal plan was put together with the help of my husband.  The girls and I had a busy weekend of Christmas pageant rehearsal, a Bake-a-batch fundraiser, cookie baking, the actual pageant and our annual trip to see the Nutcracker.  What we didn't count on was the house getting sick.  So far we have stayed on track but it's just not in the cards tonight.

Here is what we are having/had for dinner:

Sunday - Baked Ravioli 
My friend came over for dinner with her daughters.  I wanted to make sure I made something they would enjoy so I consulted her Pinterest page.  Her girls had seconds so I say it was a hit. I also frozen an extra one for a quick dinner one night.

Monday - Illness really took over this night.  My hubby was down for the count and my carpool friend's daughter was sick.   Not wanting to start dinner at 7 we switched our Thursday plan of fast food to Monday.  The Subway app saved the day!  Dinner was ready when we walked in.

Tuesday - Skinny Sloppy Joes
It was made and then mom (me) threw in the towel and admitted I was sick.

It's funny that I as I write this I'm watching Damaris make Homemade Tomato soup and Grilled Pimento Cheese Sandwiches.

What cheese do you use for grilled cheese sandwiches?

Friday - Looks like we don't have a plan.  Perhaps it will be the Cashew Chicken.

Meal Plan: October 18th - October 25th

Hi Everyone!! Sorry for the week off.  Our fall has been super busy and last weekend we were back in Connecticut for our niece's wedding.  I think all the traveling caught up with me because I was exhausted last week.  Since my last post I have made a life change.  I have been doing Beachbody's 21 Day Fix for 15 days now.  As you know, I work pretty hard at not turning to fast food because of our busy schedule but our quick meals have started to be not so healthy.  So here goes my first crack at a kid friendly 21 day fix approved meal plan.

   Sooooo much better than Manwich.  We all loved it.  Hubby said it would be a great base for a chili.  Side note: I left out the mushrooms.

   This was good.  I just wish it was a little more saucy.
