Salad Bar; Hold the dishes

Okay so I haven't been doing to well with this whole blog thing. I just said to my hubby the other day that I would love a chance to work on a project that I want to work on instead of planning for holidays or birthdays.
So we just celebrated Valentine's Day which fell on one of our busy family nights. For that reason we decided to make it a family celebration. We each made our own pizzas and after dinner we had dessert. Dessert consisted of chocolate covered strawberries we picked up at the grocery store and heart shaped cakes. One child wanted the strawberries and one wanted cake so I buckled. I came up with a semi-homemade Chocolate Covered Strawberry cupcake. Cool trick - if you melt a can of chocolate frosting in the microwave it turns into a chocolate glaze/ganache like topping.

This was just a box of chocolate cake mix topped with a box of strawberry mix, baked and the topped the glaze. I had extra batter after making 24 cupcakes so I baked that like a cake. After the cake cooled I used a heart cookie cutter to cut out the heart cakes. (Save the scraps to snack on. Cake scraps don't have calories, I'm sure)

I had an idea tonight. that I wish I had thought of while making the pizzas. If you are like me when ever you make tacos you probably put each topping into its own bowl. Tonight I happened to notice that if I did my normal preparations we were going to have a dishwasher situation. Meaning it should have been run the night before and was already full and who wants to do it by hand? Instead, I put all the toppings to our taco salads on one big plate. It looked like a miniature salad bar and it was too too pretty. Clean up was easy. My hubby scrapped everything into a travel container and now I have a salad for lunch tomorrow!

Now I must return to planning a Doc McStuffins party. Project list still on hold.
