Meal Plan Monday: October 26th - November 1st

I can't believe I just wrote November.  The crazy holiday season is upon us.  We are looking forward to celebrating Halloween this year! It's always nice when it ends up on a weekend.  We have a tradition of picking up a Jack-o-Lantern pizza from Papa Murphy's on Halloween.  Do you have a tradition for Halloween?

Here's what we are having for dinner this week...

Monday:  21 Day Fix Sloppy Joes
Recipe from Fixate

Tuesday:  Taco Tuesday

Wednesday:  Breakfast Dinner

Thursday:  Buffalo Chicken Pita Pizzas
Recipe Coming Soon
Did you know that Franks Red Hot is free on the 21 Day Fix program?

Friday:  Pork Tenderloin and Chunky Applesauce with Broccoli and Cauliflower
Recipe from Cooking Light

Saturday:  Jack-o-Lantern Pizza and Baked Ziti
I need to change my Baked Ziti recipe because I used to add cream cheese too my sauce.  It's not really 21 Day Fix approved anymore.  I will definitely use the left over Fixate sauce I'm making for the Sloppy Joes.

Sunday:  Beef Marsala Stew
Recipe from Cooking Light
I have wanted to make this recipe for some time.  Perfect for Sunday dinner.

Breakfast Dinner: French Toast with Cinnamon Maple Apples and Baked Turkey Bacon

We love breakfast dinner! My husband could eat breakfast for any meal of the day.  It's his absolute favorite.  We had one of those "life happens" moments and I was unable to go to my work function.  I really didn't want to have grilled cheese after having lasagna the day before and having cheeseburgers for dinner tonight.  So instead we had Breakfast!

French Toast with Cinnamon Maple Apples and Baked Turkey Bacon

French Toast
Ingredients

  • 8 Slices of Bread
  • 4 Eggs
  • 2/3 cup Almond Milk
  • Splash of Vanilla Extract
  • Cinnamon (about 3 - 4 shakes) sorry I don't always measure
  • Coconut Oil
Directions
  1. Mix the eggs, almond milk, vanilla and cinnamon together.
  2. Spread the coconut oil on your griddle or around your pan.
  3. Dip both side of the bread in the egg mixture.  You don't have to let it soak very long if you are using sandwich bread.
  4. Place the bread on the griddle.  Cook on bother sides until it looks toasted.

Cinnamon Maple Apples
Ingredients

  • 2 Apples (I used Red Delicious because that's what we had)
  • Cinnamon to your taste
  • Tablespoon of Maple Syrup (The real stuff)
  • Coconut Oil
Directions

  1. Peel and Slice your apples
  2. Spread the coconut oil around your pan.
  3. Add the apples.

  4. Sprinkle the apples with cinnamon.

  5. Pour the maple syrup over the apples.
  6. Stir and Cover
  7. Stir occasionally until the apples are soft.  The texture should be like apple pie apples.

Meal Plan: September 21 - September 27

Sunday: Grilled Cheese

The dinner with friends last Saturday was really a surprise birthday party for my MIL.  We just got back from Connecticut yesterday so dinner was a quick grilled cheese.where we surprised my MIL at her birthday celebration.

Monday: Wegmans Subs

Since we were away the grocery shopping is getting done today so Wegmans is making dinner tonight.  Plus I have had a craving for one their subs.

Tuesday: Chicken Fritter Parm with Pasta

Last weekend I bought Chicken Fritters for the fam.  I bought way too much so I put the other half in the freezer.  My husband loved his chicken parm sub and my youngest was very jealous she didn't have one.  I'll be using the leftovers to make a quick chicken parm dinner.

Family Dinner Meal Plan: August 17 - August 23

My mom is in town to help us with our day care needs.  School starts in one week and camps ended last week.  Amazingly our calendar is pretty clear this week.  Maybe I shouldn't put that out there.  Looking forward to spending the week with the girls before they head back to school.  They are getting excited.  They organized their backpacks today!

Sunday: Leftover tailgate Fried Chicken with Doctored Store Bought Mashed Potato and Corn on the grill.

Monday: State Dinner - Cedar Plank Salmon, Asparagus and Rice Pilaf

Tuesday: Black Bean and Beef Taco Tuesday

Adapted from Dine and Dish Walking Tacos.
1 pound lean ground beef, crumbled, browned and fat drained
    1 package taco seasoning
    3 Tbs water
    1 can Black Beans, drained

With your browned grown beef still in the skillet, add the Bush’s black beans, 3 Tbs of water and your taco seasoning. Heat through.

    Wednesday: French Toast and Sausage

    Thursday: Beer can chicken

    Friday: Vegetable Lo Mein
    Recipe from Wegmans
You can add teriyaki chicken too.

    Ingredients
1 pkg (21.15 oz) Asian Classics Lo Mein Noodles (Frozen Foods), prepared per pkg directions
    2 Tbsp Wegmans Vegetable Oil
1 small onion, peeled, thinly sliced
1 pkg (12 oz) Food You Feel Good About Cleaned & Cut Asian Slaw
1/2 cup Asian Classics Stir-Fry Sauce (International Foods)

    Directions
    1. Drizzle oil around sides of stir-fry pan; tilt pan to distribute evenly. Heat oil in pan on HIGH until oil faintly smokes. (If oil smokes too much, pan is too hot.)

    2. Add onion. Stir and toss, 2-3 min, until onions are soft. Add slaw; stir and toss 2 min. Add noodles and stir-fry sauce. Stir briefly, 1-2 min, to heat through.
Saturday:  Celebrating a good friend's engagement! I was planning on bringing a dish known as Funeral Potatoes.  Perhaps that is a bad idea.  Though, I also know this recipe as Harvest Potatoes.  That sounds a lot better, right?!
