Meal Plan: February 1 - February 7

It's Super Bowl Sunday!  As Patriots fans we are very excited for tonight's game!  I am also celebrating the fact that January is over!  Whew! I thought it was supposed to be March that came in like a lion.  January made me want to run and hide back in 2014.  Even though it is a Hallmark holiday, I am going to take comfort in the fact that Valentine's Day is this month and focus on doing all things will love... and joy and understanding.

Here's what we are having this week:

Sunday: Walking Tacos, Clean Eating Chicken Wings and Mozzarella Sticks

Quick Cole Slaw1lb Bag of Cole Slaw mix1 cup Marzetti Original Slaw Dressing1/8 tsp celery seed1 tsp sesame oil (optional but delicious)

Thursday: Chicken Scaloppine With Pesto with Asparagus Orzo
Chicken Recipe from Weight Watchers  
4 (6-ounce) skinless, boneless chicken breast halves
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 tablespoon olive oil
1/2 cup marsala wine
2 tablespoons pesto

4 slices part-skim mozzarella cheese


Friday: Pizza at Dance Dress Rehearsal

Saturday: Black Bean Burritos

So good it's hard not to eat the whole pan.

Meal Plan: November 23 - November 29

It's Thanksgiving!!  Thanksgiving is my favorite holiday.  I think I love it because it's simple.  The meal prep is not simple, of course, but the day is simple.  Good food, family time, football, naps, sitting around talking, good food.  It didn't take months to plan.  There wasn't a ton of shopping. Sadly, there are other days in this week.  Here is what else we are eating this week.


Sunday - Lasagna and Salad

This is the recipe my MIL made when she visited a few weeks ago.

Monday - Healthified Copycat Turkey Bacon Ranch Wrap with Grapes


4 Flatout Light Original flatbreads
8 oz 98% fat free roasted turkey deli meat
8 slices precooked bacon
4 slices Cheddar Cheese
1 tomato, thinly sliced
Red onion slices
1/4 cup Ranch yogurt dressing
Iceberg or Romaine lettuce
Directions
  1. Spread ranch dressing all over the center of the flatbread.
  2. Top with turkey, bacon, lettuce, cheese, onion, and tomatoes. Fold the sides in, and then roll up.

Thursday - Thanksgiving! - Mac and Cheese, Cole Slaw, Cranberry Sauce
The Mac and Cheese is a family secret.  My cousin used to tell me to use the recipe from the Ronzoni box.  Oh okay, I'll be nice.  Here's the link for the Ronzoni recipe. ;)

I don't know how long I have been making this recipe.  I still get a kick out of the cranberries popping open.  (Again, it's the simple things in life.)  I love it on my turkey and it's great for leftover sandwiches.

Meal Plan: October 18th - October 25th

Hi Everyone!! Sorry for the week off.  Our fall has been super busy and last weekend we were back in Connecticut for our niece's wedding.  I think all the traveling caught up with me because I was exhausted last week.  Since my last post I have made a life change.  I have been doing Beachbody's 21 Day Fix for 15 days now.  As you know, I work pretty hard at not turning to fast food because of our busy schedule but our quick meals have started to be not so healthy.  So here goes my first crack at a kid friendly 21 day fix approved meal plan.

   Sooooo much better than Manwich.  We all loved it.  Hubby said it would be a great base for a chili.  Side note: I left out the mushrooms.

   This was good.  I just wish it was a little more saucy.

Meal Plan: August 31 - September 6




Sunday: Slow cooker Chicken and Noodles

This didn't get made last week so we decided to make this dinner for my parents when they visited. It taste very similar to our family's traditional Chicken and Dumplings.

Monday: Labor Day Cookout with Cheeseburgers, Potato Salad, Cole Slaw and Baked Beans

Tuesday: Chicken Enchiladas
This recipe brought me back to college when I would make these enchiladas for my roommates.  I pre-made this dinner and popped it in the freezer.  All I have to do tomorrow is bake it for 45.  I used one of my bags of pre-shredded chicken to make this recipe go even quicker.


Wednesday: Chicken Breast Lombardy
I was first introduced to this recipe in a Weight Watchers cookbook magazine.  I found it again on My Recipes website.  This recipe has mushrooms, marsala wine, mozzarella cheese and butter.  I'm excited to make it again.  It's been a long time.

Thursday:   Crock Pot Ravioli 
Trying this recipe for the first time.  Throwing it all in the crock pot and heading to dance.

Friday: Wraps
Our first night of company rehearsal.

4th of July Cookout Side Dishes



Happy Independence Day!

Invited to a 4th of July Cookout today? Here is what I making. I'll add pictures this afternoon. 

Deviled Eggs - Recipe from My Recipes

I first made this recipe after Easter. I wanted to use up the dyed eggs. I don't like eggs but I was told they are very good. Truth is I don't mind the yolks of a deviled egg. 

Two Dressing Cole Slaw

1lb Bag of Cole Slaw mix
1 cup Marzetti Original Slaw Dressing
1/4 cup Marie's Cole Slaw Dressing 
1 tsp sesame oil (optional but delicious)

Mix all ingredients together. 
Make at least an hour ahead of time. 

I started making cole slaw with the two dressings by accident. I prefer the Marzetti because it does not have celery seed. I but Marie's by accident one time and my family said they liked it better. Marie's has celery seed. So the next time I made it with both with a little of the Marie's so my family gets the celery seed taste they like.  My mom taught me the trick about the sesame oil. I usually only add it when I'm not taking the cole slaw to an event. 

So when I went to the store today they were out of Marie's slaw dressing. 
New recipe same great taste!

Quick Cole Slaw
1lb Bag of Cole Slaw mix
1 cup Marzetti Original Slaw Dressing
1/8 tsp celery seed
1 tsp sesame oil (optional but delicious)
