Meal Plan Monday: March 28 - April 3

I hope you had a wonderful Easter.  The time has come.  Spring Break is ending and we are entering our Dance Competition Season!


Monday:  Hawaiian Pizza Sandwiches
Using leftover ham from Easter.  The "other" King's Hawaiian roll recipe, Funeral Sandwiches, are very popular.  We loved this pizza variation.  Really, can you go wrong with King's Hawaiian?  I want to try the cuban sliders too.

Meal Plan Monday: February 22nd - 28th



It's closing week!  We close on our house this week so in preparation our meals are going to be super simple.  It will probably be more of the same next week as we will be moving.  So exciting!!

Meal Plan Monday: October 26th - November 1st

I can't believe I just wrote November.  The crazy holiday season is upon us.  We are looking forward to celebrating Halloween this year! It's always nice when it ends up on a weekend.  We have a tradition of picking up a Jack-o-Lantern pizza from Papa Murphy's on Halloween.  Do you have a tradition for Halloween?

Meal Plan Monday: All Time Favorites

We are in Disney this week so we will be eating from that Meal Plan instead.  I have put together a list of my most popular meals on the blog.

Meal Plan Monday: October 5th - October 11th

What a start to October.  As I am writing this the sun is finally making its first appearance in six days.  Of course, it is setting at the same time but it has me looking forward to tomorrow.  This week has the possibility to go by very quickly or very slowly.  We are taking the girls to Disney for this first time this Saturday.  So it will go by quickly because we have so much to do.  Or it will drag because we are all so excited.

Meal Plan: August 2nd - August 8th

My girl's are back home!  It was nice to spend some one on one time with hubs but I love having the girls in the house.  It's so lively.  So much fun craziness and laughter.  My Fixate cookbook came after they left to visit their grandparents so I brought it with me.  My girls have been on the 21 Day Fix journey with me since day 1.  They are big Autumn Calabrese fans so I wanted to keep them on the journey with by helping me meal plan with their favorites from the book.  This cookbook is awesome!  I haven't even tried the snacks yet!!

This is what we are having for dinner this week:

Sunday:  We ordered pizza after a long drive home

Monday:  Grilled Cheese and Tomato Soup
We are going to need a quick dinner after some after work grocery shopping and other appointments.

Tuesday: Breakfast for Dinner - Chicken and Waffles
When I told Hubs that it was rumored that the new cookbook was going to have a chicken and waffles recipe he was in.  Never did I think my 9 year old would be all over it too.  She made us wait until she got back to make this recipes.

White Pizza on Pita



Inspired by Cooking Light

I love arugula.  I could eat an entire bag.  I don't know what it is but it just makes me happy.  This pizza was stupid good, shut the front door good.  It came together very quickly which was just what we needed since hubs and I went to the grocery store together after work and were very hungry.  
Grocery store tip:  Meal planning and planning your grocery list really helps with cutting down costs. 

Ingredients 
4 whole grain pitas
2 tsp EVOO
3-6 cloves of garlic depending on your love of garlic
2/3 cup light ricotta cheese
2 teaspoons dried oregano
1/4 teaspoon ground black pepper
1/3 cup Parmigiano-Reggiano cheese, finely shredded
12 very thinly slices ounces of fresh mozzarella cheese
1 teaspoon fresh lemon juice
1 teaspoon balsamic vinegar
1 1/2 cups baby arugula

Directions

  1. Preheat oven to 400°.
  2.  Heat a small skillet over medium heat. Add oil to pan; swirl to coat. Add garlic; cook 2 minutes or until garlic is lightly browned. Remove garlic with a slotted spoon. Finely chop garlic. Reserve oil.
  3. Place chopped garlic, ricotta, oregano, pepper, and Parmigiano-Reggiano cheese in a medium bowl. Beat with a mixer at medium-high speed until almost smooth (about 2 minutes).
  4. While mixing the the ricotta, toast the pitas by placing them directly on the oven racks.  Remove after two minutes and place them on baking sheets.
  5. Spread ricotta mixture on the pita, leaving a 1/2-inch border. Arrange mozzarella over ricotta mixture. (3 slices per pita) 
  6. Bake at 400° for 10 minutes or cheese begins to bubble.
  7. Combine reserved oil, lemon juice, and vinegar in a medium bowl. Add arugula; toss to coat. Top pizza with arugula mixture.

Meal Plan: July 19th - July 25th

This weekend my husband and I dropped our girls off to visit with their grandparents for 2 WEEKS!  What part about being kid free are we most excited about?  Eating foods that the kids would hate.  Are we foodies or what?  Besides an empty house, I also came home to the Fixate cookbook!!  I read it cover to cover.  I'm so excited to try so many of the recipes.

Meal Plan: July 12th - July 18th

Wow! Is it already Tuesday?!  We have been having some major fun family time over the last couple days.  We had a pool day when my youngest is finally starting to conquer her fears of putting her face in the water.  Hubs introduced the girls to the first 3 Star Wars movies or the last three depending on how you look at it.  We went to the Nationals vs Orioles game at Camden Yards. And we went to the Taylor Swift concert!!  It has been a lot of fun.

It was nice to see that both parks offered gluten free and vegetarian options.  I had a turkey burger one day and went for the single burger at Shake Shack.

Tuesday: Sweet Potato Buffalo Chicken Casserole
I added the hot sauce after cooking so it was not too spicy for the kids.  I would suggest cooking this in two dishes because the potatoes did not cook enough.  It makes a ton so it will be great for lunches.

Meal Plan: March 1 - March 7

So last week's test of the Let's Cook recipes went rather well.  We liked all of the recipes that we tried.  The only one that needed some tweaking was the chili.  Next time we probably would not add the chipotle as it almost burned my daughter's tongues off.  They loved the taste just not the heat.

This week we are celebrating my daughter's birthday!!  She chose ribs for her birthday meal!  This made her dad very happy.  I think he is starting to look more forward to our girls birthday's than they are since they both keep choosing ribs.  Wellllll, maybe not.

Meal Plan: February 8th - February 14th

Happy Valentine's Day!  We are all set for the school parties.  The valentines are signed and snacks have been delivered to the school.  We are even set for a little party at the house.

This is what we are having for dinner this week:

Sunday: Chicken Scaloppine With Pesto with Asparagus Orzo
I gave in to being over tired last week and took a night off from cooking.  This was a winner last night.

Chicken Recipe from Weight Watchers  
4 (6-ounce) skinless, boneless chicken breast halves
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 tablespoon olive oil
1/2 cup marsala wine
2 tablespoons pesto

4 slices part-skim mozzarella cheese














Monday: Potato Pasta Kielbasa Skillet

So I used the potatoes that were bought for this recipe to make Chocolate covered Potato Chips.  Whoops!  I raided the pantry and used ditalini pasta as a stand in.  Still delicious.

Happy Memorial Day!  Today unofficially marks the first day of summer, grills are fired up and the cookout season is upon us.  First and foremost, it is a day to remember those who gave their lives and those who continue to give for their country.

Cilantro Lime Chicken - Bottled Marinade from Wegmans and Chicken Breasts.  Quick hint:  They sell already marinated chicken in this flavor too.

Strawberry Fields Salad - My Recipes - This salad has strawberries, nectarines, green tomatoes, glazed pecans and poppy seed dressing.  So yum!  Should be even better with the strawberries we plan to pick that morning.

50 States; 50 Meals: Nebraska

I hope everyone had a great holiday season! It is a great season for foodies for sure.

We had a simple meal for our Nebraska dinner.  It was a very Cornhusker dinner, if you will.  We had corn dogs, homemade popcorn and Eskimo Pies for dessert.A corn dog (just in case someone doesn't know) is a hot dog dipped in a cornmeal batter and then deep fried.

When I don't use the air popper I make Olive Oil Popcorn.  I follow the same instructions as you would to make popcorn with a canola oil but with a healthier oil.

Olive Oil Popcorn
1/4 Cup Olive Oil into a skillet
Add a single kernel of corn
Cover and heat at medium heat
When the kernel pops add enough corn to cover the bottom of the pan
Cover and shake
When the popping slows down, remove the pan from the heat
Salt to taste

Then for dessert we had Eskimo Pie ice cream bars.  Christian Kent Nelson, a school teacher and candy shop owner in Iowa, invented the Eskimo Pie in 1921, when a boy in his shop couldn’t decide between an ice cream and a candy bar. But it wasn't until Nelson traveled to Nebraska, where he met Russell Stover who helped him patent the idea and dub it “Eskimo Pie.”

Next up is a state famous for their buffets.

50 States; 50 Meals: Massachusetts through Montana

Oh man has it been busy. Things have been so crazy since August for multiple reasons. Both girls are now in school, dance and Girl Scouts. I knew it was going to be crazy but I have been living day by day for months. I need to visit some organizing blogs. So let me catch you up on the last six states.

Massachusetts

Massachusetts was a whole day affair for us. We started with Dunkin' Donuts Boston Kreme Donuts. Dunkin' Donuts opened In Quincy, Massachusetts in 1950.

Then for lunch we had Fluffernutter sandwiches. This is one of the best sandwiches ever. Bread, Peanut Butter and Marshmallow Fluff. So yum.  The fluffernutter was invented after a man named Archibald Query (that's some name, huh?) invented marshmallow cream in Somerville, Mass.
For dinner we had Boston Baked Beans, of course, and Kelly's Roast Beef Sandwiches.  Kelly's claims to have created the Original Roast Beef Sandwich in 1951.  If you visit Revere Beach you can still pick up a sandwich at their first store.  And how do you have a Massachusetts dinner without having Sam Adams!  It was a wicked awesome foodie day!

Michigan

When most people hear Coney Island Dog they think New York but this hot dog actually originated in a Greek American style restaurant in Michigan.  They call these restaurants "Coney Islands".  There is a debate of which Coney Island actually created this hot dog, also called the Michigan hot dog, but they do agree on the recipe.  A a natural-casing beef hot dog, topped with an bean-less chili (or Michigan sauce), white onions, with one or two stripes of yellow mustard.  The hot dog is steamed and served on a steamed bun.

Michigan Sauce Recipe

Minnesota

The Minnesota HotDish is what the rest of the world would call a casserole.  Simple as that.  Stealing from Wikipedia, "The history of the hotdish goes back to when “budget-minded farm wives needed to feed their own families, as well as congregations in the basements of the first Minnesota churches.”  It seemed that when I Googled HotDish I was finding a beef, green bean, corn concoction with tator tots on top so that was what we made.  It was alright.  Probably won't make it again and I wished I had used the recipe I had gotten from my Minnesota friend.

Mississippi

So truth telling time.  Anther reason I am behind on this blog is because I got stuck with what to make for Mississippi.  I knew my family wouldn't eat Catfish Po Boys and I didn't have time to make homemade Tamales.  We had this conversation in church one day and my friend suggested that we make Elvis' favorite sandwich.  We aren't sure what exactly is Elvis' favorite sandwich because there are tons of variations.  We ended up having fried smashed banana and peanut butter sandwiches.  I think they would have been better with some of Archibald's marshmallow fluff.

Hubby also made Mississippi Mud Pie for dessert.  Here is the recipe we used.  I didn't prefer the crust because it was so crumbly but it tasted very good.

Missouri

I broke my rule of going out and buying the food instead of actually making it and it totally backfired.  So far I have made pizza for Connecticut and Illinois and now we have another style of pizza for Missouri, St. Louis Style Pizza.  This style has a very thin crispy crust and uses Provel processed cheese.  The pizzas  are cut into squares or rectangles instead of wedges.   Does this remind you of any famous pizza chains? Missouri is also know for Toasted Ravioli, which I love.  However, the grocery store was out of cheese ravioli (I find that odd) and they didn't have Provel cheese.  I knew just the place that has toasted ravioli and thin crispy crust pizzas so we went to Ledo's pizza.  Here comes the backfirst part... They changed their crust so it is now thin and soft.  Doh!  Oh well, at least I had a night off from cooking. IMG_0138

Montana

Yay! I'm at Montana!  Okay so it was a pretty quick decision.  As soon as I read Bison Burgers off the list to my husband his eyes got all big and he nodded his head yes 50 times.  He prepared them the way he would prepare an everyday "cow" burger.  We didn't tell the kids about the meat change and my oldest picked up on it the texture change pretty quick.  They both liked them but were grossed out when we told them it was bison.  I have no idea why eating a cow is any better but I'm thinking it is just because that is what they are used to eating.

Cauliflower is currently in season for Montana.  I had just seen a recipe for Cauliflower Tots on the blog Skinnytaste.  They were really good.  It was eating a handheld squash casserole because the flavors reminded me of my sister-in-laws squash casserole.

There!! Caught up!! The oven is preheating for our Nebraska dinner as we speak.  Or as the girls call it... fair food dinner.
