It's Spring Break week!  With as cold as it has been, I can't really say I'm excited about it.  We don't have anything planned.  Just looking forward to having a slower week.

This weekend was busy with barely anytime to meal plan.  Thanks to the Mealboard app it was done in no time.

Meal Plan: March 15th - March 21st

Happy Saint Patrick's Day!  There is usually some protest from my Scottish husband on this holiday.  The girls and I usually hear that we should be wearing orange as we are not Irish.  He doesn't seem to mind the food or the Guinness beer, for that matter.

Here is what we are having this week:

Sunday: Sloppy Joes, Cole Slaw and Potato Chips
This Sunday we cooked for our church's Youth Group.  I kept it simple and just used Manwich instead of a homemade recipe.  Though Skinny Taste does have a good one. I channeled my inner lunch lady and even served them with an ice cream scoop.  Side note: Six pounds of ground beef was plenty for our group, about 30 people.
How do you eat your Sloppy Joes?  I put the cole slaw and potato chips on top.

Monday: White Cheddar & Chive Potato Soup in a Bread Bowl AKA Copycat Panera Bread at home.

This is the fifth year my Sunday School has come together to make this meal. The soup always gets rave reviews.

Meal Plan: March 8th - March 14th

So how is everyone dealing with the time change?  I started off strong but it is slowly starting to affect me.  This Saturday my daughters had their first dance competition so Sunday was a lot of running around doing errands.  This week my husband has training so I kept the menu pretty easy.

This is what we are having this week:

Sunday: Rotisserie Chicken, Mashed Sweet Potatoes, Peas

Monday: Lasagna and Salad











Tuesday: Tuna Melts

Wednesday: Baked Potato and Salad

Thursday: Spaghetti with Pesto













Friday: Egg Roll in a Bowl
The inside of the egg roll with out the fried wonton.  I have a couple recipes for this pinned on Pinterest right now.  I will probably take my favorite parts from each.  Right now I know it will include a bag of Chinese slaw and ground pork served over lo men noodles with wonton strips for crunch.  I'll let you know how it goes.

Meal Plan: March 1 - March 7

So last week's test of the Let's Cook recipes went rather well.  We liked all of the recipes that we tried.  The only one that needed some tweaking was the chili.  Next time we probably would not add the chipotle as it almost burned my daughter's tongues off.  They loved the taste just not the heat.

This week we are celebrating my daughter's birthday!!  She chose ribs for her birthday meal!  This made her dad very happy.  I think he is starting to look more forward to our girls birthday's than they are since they both keep choosing ribs.  Wellllll, maybe not.
