This week is going to be mad crazy. I have been planning a Father Daughter dance for the girl's school and it is this Friday. I have helped plan lots of events for our church so I'm not sure why this event is causing me so much stress. To be honest I'm ready for it to be here and done. One minute I tell myself to keep it simple and it's going to be great. Then I think about the To Do list that never seems to get shorter. As soon as I think I can cross something off my list another something gets added. Like ordering dresses on Wednesday because you have no time to shop and finally have UPS update to say they will be delivered the day AFTER the dance. Or emailing parents to let them know they won a prize only to have their emails be returned. Ugh nothing checked off the To Do list. In the end I know everything will work out and it is going to be great I just don't know why the road to get there is not cooperating. Such is life I guess. I'm telling you this because the meal plan this week is a bit wonky so I thought you might want to know why I'm not doing that much cooking. I'm giving myself as much extra time as I can.
Monday: Crockpot Baked Potatoes and Salad
These are prepped and ready to be thrown in the crock-pot before we head out to dance. Hubby has a meeting he will be heading to shorty after we get home. We will be topping the potatoes with black beans and salsa and I have a southwest bag salad ready to serve with it. I'm wishing I had picked up an avocado now.
Potato Recipe from Food.com. There are tons on Pinterest too.
Tuesday: Steak, Sweet Potatoes and Brussels Sprouts
My youngest has a craving for steak so we picked up some perfect portioned New York strips. These are very thin and used to make my husband very sad but he has come around and was actually full the last time we had them.
Wednesday: National Eating Healthy Day!
Pasta and Sauce
Pretty much this is spaghetti night but my oldest doesn't like spaghetti noodles. Likes every other pasta shape! I have a planned dinner out with my Mom's Group.
Thursday: Sushi
The night before the dance! I'm banking on last minute To Do errands so hubby said that he would pick up veggie sushi from Wegmans.
Friday: Sandwiches
Pretty much this night's dinner is eat something sometime. Sandwiches are pretty easy.
Saturday: Hubby's Plan
I asked Hubby to make dinner or plan on eating out because I plan on shopping for my daughter's birthday on this day and don't want to have the stress of having to be back in time to cook dinner.
Sunday: Football Potluck
We are having some Patriots and Redskins fans over to watch the game. So far I have come up with Buffalo Chicken Meatballs (maybe as a slider) and smashed red potatoes. See what I did there? ;)
Meatball recipe from Skinnytaste
Red Potatoes from The Pioneer Woman
Enjoy your week! I'll see you on the other side. lol

Meal Plan: August 30th - September 5th
We had the best first week back to school and dance. This year I got super organized and printed out a morning routine and afternoon schedule for the girls. They love knowing to do and feel included in the plans. I love that everything is out of my head. I don't have the list of things to do constantly scrolling through my head. I don't feel like I am constantly barking out orders and they are less overwhelmed by me constantly listing everything out loud. Everyone is calm and happy.
As always, meal planning is another thing we do to keep things simple in the house.
This is what we are having this week:
Sunday: Apricot Glazed Chicken with Wild Rice and Sautéed Zucchini & Yellow Squash
Chicken recipe from Cooking Light
Monday: Quinoa Fried Rice with Chicken and Pineapple Skewers
Fried Rice recipe from Skinnytaste
Skewers recipe from Fixate
Tuesday: Grilled Sausages and Homemade Chips
Wednesday: Baked Potato and Salad
Thursday: Veggie Noodles from Barilla and Fixate Sauce
KidFresh Mac and Cheese and Chicken Nuggets for my oldest. She has an hour break and eats up her own dinner. Last week she and her BFF showed up with the Mac and Cheese. (Don't tell them there are carrots in there.)
Friday: Left over sausages.
Going to our first High School Football game!! Go Patriots!
Saturday: Celebrating two friends wedding

Meal Plan: March 8th - March 14th
So how is everyone dealing with the time change? I started off strong but it is slowly starting to affect me. This Saturday my daughters had their first dance competition so Sunday was a lot of running around doing errands. This week my husband has training so I kept the menu pretty easy.
This is what we are having this week:
Sunday: Rotisserie Chicken, Mashed Sweet Potatoes, Peas
Monday: Lasagna and Salad
Tuesday: Tuna Melts
Wednesday: Baked Potato and Salad
Thursday: Spaghetti with Pesto
Friday: Egg Roll in a Bowl
The inside of the egg roll with out the fried wonton. I have a couple recipes for this pinned on Pinterest right now. I will probably take my favorite parts from each. Right now I know it will include a bag of Chinese slaw and ground pork served over lo men noodles with wonton strips for crunch. I'll let you know how it goes.

Meal Plan: October 5 - October 12
This is going to be a short meal plan week as we are wrapping up our busy fall with our nieces wedding on Friday. We are so excited this weekend is here. We have been looking forward to celebrating at the wedding for quite some time.
Sunday - Two Bean Chili con Carne
It has definitely felt like chili weather this weekend. Nothing is better for football day in fall then a bowl full of chili.
This is the base recipe that I started making 12 years ago. But you know how people are with their chili recipes. It's in the vault. I will tell you that I mix my beans instead of using one kind.
Monday - Baked Chicken Fajitas
Recipe from budgetbytes. com

Tuesday - Cheeseburgers
My daughter has wanted a cheeseburger for a couple weeks now so I plan to oblige.
Wednesday - Baked Potatoes with Left Over Chili.
Thursday - Dinner with Friends
Friday - Wedding!!
Saturday - Dinner with Friends

Sunday, September 7, 2014
Meal Plan: September 7 - September 13
Sunday: Dorito Pie
A tradition in our house for the first football Sunday. I first saw this recipe on an episode of Rachel Ray. It is Charlie Gibson's recipe called Enchilada Casserole but we renamed it.
Monday: Grilled Cheese and Tomato Soup
Tuesday: Chicken Milanese
I love making this recipe because it is kid friendly without being too kiddy. I do put ranch on the girls salads rather than the lemon dressing. Pair it with a box of Near East Rice Pilaf (Any flavor will do. We are having the one with almonds)
Make it even faster by buying a bottle of Lemon Vinaigrette.

Wednesday: Baked Ziti
Making my first frozen dinner. Out of the freezer into the oven!

What's for Dinner?: June 29 - July 6
We are back in the dance studio Monday thru Thursday for the next two weeks. We needed lots of quick meals. I hope everyone has a great 4th of July!
Here's what we are having for dinner this week:
Sunday: Creamy Chicken and Noodles
My brother's band just released their first single, Sunday's Best. The title of the song got me thinking about big Sunday dinners. You know the kind they show on Blue Bloods each week.
When I think of a Sunday Best dinner I think of my Mother-in-law's pot roast and my Nana/Aunt's Chicken and Dumplings. This recipe takes all the hard work out of Chicken and Dumplings with the same great taste.
Recipe from Going Jane
Take a listen to Sunday's Best.
Cover each potato in aluminum foil. Cook the potatoes on low for about eight hours.
Tuesday: Chicken Sliders, Pop Chips, Fruit
Wednesday: Popcorn Shrimp
Thursday: Wraps and Fruit
Friday: 4th of July!
Saturday: Texas State Dinner - King Ranch Chicken, Texas Sheet Cake
Recipe from My Recipes
What do you plan on having on the 4th of July?
