Meal Plan Monday: November 9th - November 15th

So of course as soon as I vented about the dance everything fell into place and there was nothing to stress about.  Like calling the IT guy and then figuring out your problem.  By Friday I had so much excited energy it took everything I had to not jump in and dance; but, I had strict orders not to bust a move. It was a success if I say so myself.  I did have to give up my quiet night too myself but it was well worth it!

This Wednesday is my oldest daughters 10th birthday.  She has been waiting for this birthday since she turned 9.  She can not wait to be a preteen!  I have so many mixed emotions about this birthday.  I'm excited to see her grow and mature but she is growing faster than I can keep up.

Monday - Panera Bread Fund Raiser for the School
Not a bad choice as Panera always lands on the clean eating restaurant lists.  I hear the menu changed so I will definitely check it out and decide before we go.  

Tuesday - Black Bean Enchiladas

We have a few friends at Disney this week and they have inspired me to make one of my favorite meals I had when we were there a couple weeks ago.

Friday - Egg Roll in a Bowl
Take out at home!  We love this recipe.  It turned out so well last time.  I hope I can duplicate its tastiness.

Sunday - Chicken Spiedies and Roasted Vegetables
Spiedies Pronounced "speedies"
Spiedies were originally from Italy. They are marinated cubes of meat, traditionally lamb, cooked on a skewer like a kebab. Pork, chicken, veal, venison, and beef are also used. The meat is marinated and then grilled. The marinade recipe varies, usually involving olive oil, vinegar, and a variety of Italian spices and fresh mint. The meat is then served on Italian bread. The bread is used to take the meat off of the skewer. I was able to find bottle Spiedie marinade at my grocery store.

Meal Plan Monday: All Time Favorites

We are in Disney this week so we will be eating from that Meal Plan instead.  I have put together a list of my most popular meals on the blog.

1. Pita Pizza - Recipe Inspired from Fits Simple - I added sausage, made the sauce less chunky and added arugula on top.



2.  Egg Roll in a Bowl - This recipe is great for Friday Night "Take Out" nights.


3. Zoodles and Turkey Meatballs from the Fixate Cookbook - This is the number one recipe on the blog and of my Pinterest posts.  You have to get the cookbook for the recipe!  It's so good.





5. Tomato Pesto Grilled Cheese - I want one just thinking about it.

Meal Plan: August 9th - August 16th

Well we are heading back into the crazy dance schedule season.  The next two weeks each daughter has company camp with long rehearsal nights.  Time to get my mad organizational skills out for my workout and dinner times.

This is what we are having for dinner this week:

Sunday:  Turkey Tenderloin, Corn on the Cob and Grilled Zucchini and Squash 

1 red, 1 green, 1 yellow

Monday:  Chicken Parm with Broccoli

I made extra chicken when we had the Chicken and Waffles for dinner.
1 red, 2 green, 1 yellow, 1/2 orange, 3.5 tsp

Tuesday: Cheeseburgers with Salad

1 red, 1.5 green, 1 blue (with bun 2 yellow)

Wednesday: Macaroni and Cheese with Broccoli and Chicken

.5 red, .5 green, .5 yellow, 1 blue, .5 tsp

Thursday: Egg Roll in a Bowl

Friday: Spaghetti with Chicken and Pesto and Cauliflower
Hubs will be doing a 32 mile bike ride for the Boys and Girls Club on Saturday so we are going to carb him up.

1 red, 1 green, 2 yellow, 1 blue

Saturday: Dinner Out
Race Day and Back to School shopping Day.  I think dinner out will be best.

Food Inspired: Egg Roll In a Bowl



My family loves egg rolls but I'm not always a fan of the deep fried greasy wonton.  I came across these recipes on Pinterest and new it would be a hit.  I did a little combining and threw in some of my one flavors for my version of Egg Roll in a Bowl.

Ingredients

1lb Ground Pork
1 - 10oz bag of Asian Slaw (Napa Cabbage, Carrots and Celery)
1 tbsp Sesame Oil
1 medium onion, chopped
2 cloves garlic, chopped
1 tsp fresh ginger, finely chopped
4 tbsp tamari or low sodium soy sauce
1 tsp rice vinegar
sea salt

Directions

1. Cook the pork in a sauté pan.  Season with a pinch of salt and pepper.
2. Remove the pork from the pan.
3. Add the sesame oil.
4. Add the onions.  Cook for 2 mins then and garlic.  Sauté until the onions are cooked. (I like to give the onions a head start so the garlic does not burn.)
5. Add the slaw mix and ginger.  Cook for 10 minutes, stirring often.  The slaw will cook way down.
6. Add the ground pork back to the pan.
7. Pour in the tamarin or soy sauce and vinegar.  This is a great time to scrap the bottom of the pan for great flavor. Simmer for 5 minutes.

Serve over brown rice or lo men noodles for a heartier dinner.  

Side Dish Idea

Quick Broccoli Slaw - Combine broccoli slaw with a ginger sesame dressing.

Meal Plan: March 8th - March 14th

So how is everyone dealing with the time change?  I started off strong but it is slowly starting to affect me.  This Saturday my daughters had their first dance competition so Sunday was a lot of running around doing errands.  This week my husband has training so I kept the menu pretty easy.

This is what we are having this week:

Sunday: Rotisserie Chicken, Mashed Sweet Potatoes, Peas

Monday: Lasagna and Salad











Tuesday: Tuna Melts

Wednesday: Baked Potato and Salad

Thursday: Spaghetti with Pesto













Friday: Egg Roll in a Bowl
The inside of the egg roll with out the fried wonton.  I have a couple recipes for this pinned on Pinterest right now.  I will probably take my favorite parts from each.  Right now I know it will include a bag of Chinese slaw and ground pork served over lo men noodles with wonton strips for crunch.  I'll let you know how it goes.
