Meal Plan Monday: March 28 - April 3

I hope you had a wonderful Easter.  The time has come.  Spring Break is ending and we are entering our Dance Competition Season!


Monday:  Hawaiian Pizza Sandwiches
Using leftover ham from Easter.  The "other" King's Hawaiian roll recipe, Funeral Sandwiches, are very popular.  We loved this pizza variation.  Really, can you go wrong with King's Hawaiian?  I want to try the cuban sliders too.

Meal Plan Monday: February 15th - February 21st



I'm so happy that I can finally share our good news.  We are buying a house!  We close in two weeks. These last few weeks have been so busy.  Every spare moment has gone into purging and packing.  It has caused the blog to go out late and for that I apologize.

This week I'm trying to recipes from Hello Fresh.  There a ton of box meal subscriptions now but Hello Fresh has always peeked my interest.  I couldn't justify the extra expense when we already go to the grocery store every week.  And really if I meal prep its essentially the same as having all the food shipped to me prepped and ready to go.  Long story short is I as happy to see that they will give you their recipes on the website, some are from Jamie Oliver, and they offer family friendly recipes.

We are super excited for this weekend.  My daughter's are dancing in the Dance Company Showcase. It's going to be a busy weekend for sure but I'm excited to see their dances on stage.  They have been working on them since August.  This is also a big year for my oldest as this will be her first solo.  I'll probably be a wreck.

Meal Plan Monday: December 7th - December 13th

The countdown to Christmas is on and that includes Christmas parties!  We have my companies party this Saturday but before we get there we have to get through a crazy week.  I have three church meetings this week at church.  This doesn't always happen but I guess you can say the stars aligned.  This week is all about fast meals to help us get through this busy week.

Meal Plan: September 6th - September 13th


Happy Labor Day.  Summer is officially coming to an end.  People are talking about Pumpkin Spice Lattes, Pumpkin Beer and Dunkin Donuts went pumpkin crazy.  We typically don't start with the fall foods until there is a chill in there air but when that fally goodness is staring you in the face its hard not to enjoy it.  I dipped my toe into fall this week with our menu planning with some easy comforting foods that say Come on Fall.

Sunday: 12th Anniversary Brunch
Today we took the kids to brunch to celebrate our twelve year anniversary.

Monday: BBQ Chicken, Corn on the Cob and Salad

Meal Plan: March 8th - March 14th

So how is everyone dealing with the time change?  I started off strong but it is slowly starting to affect me.  This Saturday my daughters had their first dance competition so Sunday was a lot of running around doing errands.  This week my husband has training so I kept the menu pretty easy.

This is what we are having this week:

Sunday: Rotisserie Chicken, Mashed Sweet Potatoes, Peas

Monday: Lasagna and Salad











Tuesday: Tuna Melts

Wednesday: Baked Potato and Salad

Thursday: Spaghetti with Pesto













Friday: Egg Roll in a Bowl
The inside of the egg roll with out the fried wonton.  I have a couple recipes for this pinned on Pinterest right now.  I will probably take my favorite parts from each.  Right now I know it will include a bag of Chinese slaw and ground pork served over lo men noodles with wonton strips for crunch.  I'll let you know how it goes.

Meal Plan: January 13 - January 18

This week I'm reaping the rewards of cooking frozen meals last Saturday.  Side note: Can you believe it is only the second full week of 2015?  I feel like we celebrated the New year weeks ago.  It's going to be quite the year.



Sunday - Lasagna with Béchamel Sauce


Ingredients
1 lb 80% lean ground beef
1 jar (24 oz) Food You Feel Good About Smooth Marinara Sauce
2 cups water
salt
pepper
3 tablespoons butter
3 tablespoons all-purpose flour
2 cups low-fat milk
1 pinch ground nutmeg
3-1/4 cups Wegmans Whole Milk Shredded Mozzarella Cheese, divided
1/3 cup + 2 Tbsp Italian Classics Grated Italian Blend, divided
1 Tbsp fresh parsley, chopped
12 sheets Italian Classics Fancy Cut No. 15 Lasagne, uncooked


Directions
Preheat oven to 375 degrees.
  1. Brown ground beef in large saucepan on MEDIUM; drain off excess fat. Add pasta sauce and water to ground beef. Season with salt and pepper. Bring to boil, about 3-5 min. Set aside.


  1. To make bechamel sauce, melt the butter in a saucepan over medium heat and whisk in the flour. Allow the flour and butter to cook until light and foamy, about 2 minutes, whisking constantly; whisk in milk, a little at a time. Whisk in the pinch of salt and nutmeg and bring the sauce to a bare simmer, whisking constantly until thickened, about 10 minutes. Remove sauce from the heat and set aside.


  1. Layer in following order in 9"x 13" baking dish: 1-1/2 cups sauce, 4 lasagna strips, 1/2 bechamel, cheese, 1-1/2 cups sauce, 4 lasagna strips, bechamel, cheese, 1-1/2 cups sauce, 4 lasagna strips, bechamel, remaining sauce. Sprinkle with remaining cheeses.


  1. Cover pan with aluminum foil. Bake on center rack in oven 40 min. Remove cover; bake 15 min. Let stand 10 min before cutting.

Meal Plan: January 4 - January 10

New Year; New Recipes

Well Christmas has been packed away.  The house is back to normal and we are heading back regular routine.  I am starting this year with trying new recipes.  I'm so excited I'm almost giddy about cooking dinner this week.

This recipe was good but needs so tweaking.  I used cubed potatoes instead of zucchini.  It needed salt and I wouldn't use thyme again.

Meal Plan: November 23 - November 29

It's Thanksgiving!!  Thanksgiving is my favorite holiday.  I think I love it because it's simple.  The meal prep is not simple, of course, but the day is simple.  Good food, family time, football, naps, sitting around talking, good food.  It didn't take months to plan.  There wasn't a ton of shopping. Sadly, there are other days in this week.  Here is what else we are eating this week.


Sunday - Lasagna and Salad

This is the recipe my MIL made when she visited a few weeks ago.

Monday - Healthified Copycat Turkey Bacon Ranch Wrap with Grapes


4 Flatout Light Original flatbreads
8 oz 98% fat free roasted turkey deli meat
8 slices precooked bacon
4 slices Cheddar Cheese
1 tomato, thinly sliced
Red onion slices
1/4 cup Ranch yogurt dressing
Iceberg or Romaine lettuce
Directions
  1. Spread ranch dressing all over the center of the flatbread.
  2. Top with turkey, bacon, lettuce, cheese, onion, and tomatoes. Fold the sides in, and then roll up.

I don't know how long I have been making this recipe.  I still get a kick out of the cranberries popping open.  (Again, it's the simple things in life.)  I love it on my turkey and it's great for leftover sandwiches.
