Meal Plan Monday: February 8th - February 14th

The Super Bowl is over.  I hope everyone is fairing well and not too sleepy from staying up watching the commercials game.  I'm excited for this week's meal plan because I feel like I actually get to cook this week instead of throwing something together.  We still didn't get the final word on my big news so I'm not sharing yet.  It all started on Christmas Eve so hopefully we will be able to celebrate on Valentine's Day!  Speaking of which, I have barely thought about Valentine's Day except to know we are going to have our traditional heart shaped pizza.  Do you have plans?


Monday: Penne and Chicken Tenderloins with Tomato Sauce

Tuesday: Pancake Dinner at Church for Shrove Tuesday

Wednesday: Taco Tuesday on Wednesday
Recipe for Homemade Taco Seasoning.  This recipe is all over Pinterest but Family Fresh Meals.com tells you how to cook with it as well.


Thursday: Beef Negimaki (Steak and Scallions) Dinner
I'm turning one of our favorite appetizers into an entree.  We used to always order this appetizer when we order sushi in.  Loved it and we have not had it since we moved.  I am going to use a flank steak cooked with the scallions and asparagus because I have seen that used in some recipes as well.  I need to nail down the marinade.

Friday: Take out at home: Chicken with Mixed Vegetables aka Stir Fry


Saturday:  Left-overs

Sunday: Happy Valentine's Day - Heart Shaped Pizza from Papa Murphy's.

Visit my Facebook page to see how I prepped for this week's Meal Plan. Prepping definelty saved me yesterday.  Our Super Bowl guests left around 9 and I still needed to pack lunch.  Thanks to my meal prep I was able to throw lunch together, which will save me time in the morning and save my wallet from having to buy lunch.

Meal Plan Monday: December 28th - January 3rd

Happy Monday! I hope you had a wonderful holiday.  I have to tell you I was exhausted last night.  I tried having a cup of coffee to help me stay awake and get things done.  I totally fell asleep mid cup. We were having fun but we were on the go a lot and my youngest didn't feel well for most of it.  Between the holiday and she being sick I never planned out the entire meal plan for this weekend. I'm not even sure I know what I feel like having for dinner those days.  Maybe you can suggest somethings?  Yesterday I was so anxious that I hadn't gotten in a workout.  I was rushing around like crazy trying to get it done before the 1:00 football game and decided to stop five minutes in and just hang out with my daughters during the game.  It was nice to sit and be with them.  Something I would like to do more this year.  I was still able to do 30 minutes of the 21 Day Fix after the game so it all worked out and I was less stressed.

Are you ready for the New Year?  I have this feeling that it is going to be a great year.  I have ordered the new Beachbody program, Hammer and Chisel.  I will be officially starting that on January 4th.  Until then, I am following the Beachbody on Demand workout program.  I will keep you updated on my thoughts for that program.  I have a few other things in the works for the year that I can't wait to share with you.  Stay tuned!

Anyway, this week is all about fast dinners and catching up with friends since the girls are out of school and dance is closed.

I am bringing a 21 Day Fix(ish) approved 7 layer Dip.  It's a combination of these two recipes from FantasicFood and Beachbody.  I'll write mine down and post it.  I am going to use sour cream instead of the Greek yogurt since I am taking it to a party.  I'm never sure how that substitution will actually be so I'd rather use the tried and true ingredient for a party and try the substitution at home.

Friday: Cranberry Pork Tenderloin, Brussel Sprouts and Sweet Potatoes
I had some cranberry sauce leftover from Christmas so we are having this instead of apples and sauerkraut.

Meal Plan Monday: November 23rd - November 29th

 I feel like I was just commenting on how I couldn't believe that it was November and now here we are at Thanksgiving.  I love this holiday.  Thanksgiving is my simple Christmas.  You go straight to the family time and good meal.  Though now that I don't wait for Black Friday to start my shopping Christmas is getting less stressful.  With all the gearing up for Thanksgiving the rest of the week  can easily get forgotten but you still gotta eat!  Here is what we are having this week...

Meal Plan: July 5th - July 11th

This is a quick post.  We got home from being out of town today and hit the ground running to get things done before heading to the dance studio.  More dinners at the dance studio this week.  And here I was ready to relax this summer.

Monday - "Cleaned up" Monte Cristo for Grilled Cheese Sandwich Month
Recipe from Clean Eating Magazine
A Monte Cristo is a fried ham and cheese sandwich.  This recipe uses turkey instead of ham, and adds a pear and spinach.  Our family was split on this recipe.

Meal Plan: February 8th - February 14th

Happy Valentine's Day!  We are all set for the school parties.  The valentines are signed and snacks have been delivered to the school.  We are even set for a little party at the house.

This is what we are having for dinner this week:

Sunday: Chicken Scaloppine With Pesto with Asparagus Orzo
I gave in to being over tired last week and took a night off from cooking.  This was a winner last night.

Chicken Recipe from Weight Watchers  
4 (6-ounce) skinless, boneless chicken breast halves
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 tablespoon olive oil
1/2 cup marsala wine
2 tablespoons pesto

4 slices part-skim mozzarella cheese














Monday: Potato Pasta Kielbasa Skillet

So I used the potatoes that were bought for this recipe to make Chocolate covered Potato Chips.  Whoops!  I raided the pantry and used ditalini pasta as a stand in.  Still delicious.

What are we having for dinner?: May 24 - May 31

Happy Memorial Day!  Today unofficially marks the first day of summer, grills are fired up and the cookout season is upon us.  First and foremost, it is a day to remember those who gave their lives and those who continue to give for their country.

I substituted refried bean for refried black beans.

Wednesday: Hot Dogs and Baked Bean


Thursday: Cashew Chicken - Wegmans
This recipe is better than Chinese take-out. 


Friday:  My Birthday Dinner

Saturday: Cilantro Lime Chicken, Grilled Corn & Black Beans and Strawberry Fields Salad


Cilantro Lime Chicken - Bottled Marinade from Wegmans and Chicken Breasts.  Quick hint:  They sell already marinated chicken in this flavor too.
Grilled Corn & Black Beans - Wegmans
Strawberry Fields Salad - My Recipes - This salad has strawberries, nectarines, green tomatoes, glazed pecans and poppy seed dressing.  So yum!  Should be even better with the strawberries we plan to pick that morning.
