Meal Plan Monday: March 28 - April 3

I hope you had a wonderful Easter.  The time has come.  Spring Break is ending and we are entering our Dance Competition Season!


Monday:  Hawaiian Pizza Sandwiches
Using leftover ham from Easter.  The "other" King's Hawaiian roll recipe, Funeral Sandwiches, are very popular.  We loved this pizza variation.  Really, can you go wrong with King's Hawaiian?  I want to try the cuban sliders too.

Meal Plan Monday: February 15th - February 21st



I'm so happy that I can finally share our good news.  We are buying a house!  We close in two weeks. These last few weeks have been so busy.  Every spare moment has gone into purging and packing.  It has caused the blog to go out late and for that I apologize.

This week I'm trying to recipes from Hello Fresh.  There a ton of box meal subscriptions now but Hello Fresh has always peeked my interest.  I couldn't justify the extra expense when we already go to the grocery store every week.  And really if I meal prep its essentially the same as having all the food shipped to me prepped and ready to go.  Long story short is I as happy to see that they will give you their recipes on the website, some are from Jamie Oliver, and they offer family friendly recipes.

We are super excited for this weekend.  My daughter's are dancing in the Dance Company Showcase. It's going to be a busy weekend for sure but I'm excited to see their dances on stage.  They have been working on them since August.  This is also a big year for my oldest as this will be her first solo.  I'll probably be a wreck.

Meal Plan Monday: February 8th - February 14th

The Super Bowl is over.  I hope everyone is fairing well and not too sleepy from staying up watching the commercials game.  I'm excited for this week's meal plan because I feel like I actually get to cook this week instead of throwing something together.  We still didn't get the final word on my big news so I'm not sharing yet.  It all started on Christmas Eve so hopefully we will be able to celebrate on Valentine's Day!  Speaking of which, I have barely thought about Valentine's Day except to know we are going to have our traditional heart shaped pizza.  Do you have plans?

Thursday: Beef Negimaki (Steak and Scallions) Dinner
I'm turning one of our favorite appetizers into an entree.  We used to always order this appetizer when we order sushi in.  Loved it and we have not had it since we moved.  I am going to use a flank steak cooked with the scallions and asparagus because I have seen that used in some recipes as well.  I need to nail down the marinade.

Friday: Take out at home: Chicken with Mixed Vegetables aka Stir Fry

Sunday: Happy Valentine's Day - Heart Shaped Pizza from Papa Murphy's.

Prepping definelty saved me yesterday.  Our Super Bowl guests left around 9 and I still needed to pack lunch.  Thanks to my meal prep I was able to throw lunch together, which will save me time in the morning and save my wallet from having to buy lunch.

Meal Plan Monday: November 2nd - November 8th

This week is going to be mad crazy.  I have been planning a Father Daughter dance for the girl's school and it is this Friday.  I have helped plan lots of events for our church so I'm not sure why this event is causing me so much stress.  To be honest I'm ready for it to be here and done.  One minute I tell myself to keep it simple and it's going to be great. Then I think about the To Do list that never seems to get shorter.  As soon as I think I can cross something off my list another something gets added.  Like ordering dresses on Wednesday because you have no time to shop and finally have UPS update to say they will be delivered the day AFTER the dance.  Or emailing parents to let them know they won a prize only to have their emails be returned.  Ugh nothing checked off the To Do list.  In the end I know everything will work out and it is going to be great I just don't know why the road to get there is not cooperating.  Such is life I guess.  I'm telling you this because the meal plan this week is a bit wonky so I thought you might want to know why I'm not doing that much cooking.  I'm giving myself as much extra time as I can.

Monday: Crockpot Baked Potatoes and Salad
These are prepped and ready to be thrown in the crock-pot before we head out to dance.  Hubby has a meeting he will be heading to shorty after we get home.  We will be topping the potatoes with black beans and salsa and I have a southwest bag salad ready to serve with it. I'm wishing I had picked up an avocado now.

Tuesday: Steak, Sweet Potatoes and Brussels Sprouts
My youngest has a craving for steak so we picked up some perfect portioned New York strips.  These are very thin and used to make my husband very sad  but he has come around and was actually full the last time we had them.


Wednesday: National Eating Healthy Day! 
Pasta and Sauce
Pretty much this is spaghetti night but my oldest doesn't like spaghetti noodles.  Likes every other pasta shape! I have a planned dinner out with my Mom's Group.

Thursday: Sushi
The night before the dance!  I'm banking on last minute To Do errands so hubby said that he would pick up veggie sushi from Wegmans.

Friday: Sandwiches
Pretty much this night's dinner is eat something sometime.  Sandwiches are pretty easy.

Saturday: Hubby's Plan
I asked Hubby to make dinner or plan on eating out because I plan on shopping for my daughter's birthday on this day and don't want to have the stress of having to be back in time to cook dinner.

Sunday: Football Potluck
We are having some Patriots and Redskins fans over to watch the game.  So far I have come up with Buffalo Chicken Meatballs (maybe as a slider) and smashed red potatoes.  See what I did there? ;)

Meal Plan: August 30th - September 5th

We had the best first week back to school and dance. This year I got super organized and printed out a morning routine and afternoon schedule for the girls. They love knowing to do and feel included in the plans. I love that everything is out of my head. I don't have the list of things to do constantly scrolling through my head. I don't feel like I am constantly barking out orders and they are less overwhelmed by me constantly listing everything out loud. Everyone is calm and happy.


As always, meal planning is another thing we do to keep things simple in the house.

Meal Plan: August 16th - August 22nd

One more week until school starts!  Are you ready or sad to see Summer come to an end?  Maybe a little of both?  I'm ready for a stead routine.  Every week this summer we were having to figure out a different schedule.  This week my youngest has dance camp in the afternoons so dinners are being planned around that.

Here is what we are having for dinner this week:

Sunday: Macaroni and Cheese with Broccoli and Chicken
We were supposed to have this last week but found ourselves with one kid at dance and another at a play date. Not sure what magical world we entered that evening. The recipe reminds me of the Chicken, Broccoli and Cheddar Hot Pocket but way better, of course. My youngest even ate her chicken without complaint.Recipe from Fixate

Meal Plan: July 12th - July 18th

Wow! Is it already Tuesday?!  We have been having some major fun family time over the last couple days.  We had a pool day when my youngest is finally starting to conquer her fears of putting her face in the water.  Hubs introduced the girls to the first 3 Star Wars movies or the last three depending on how you look at it.  We went to the Nationals vs Orioles game at Camden Yards. And we went to the Taylor Swift concert!!  It has been a lot of fun.

It was nice to see that both parks offered gluten free and vegetarian options.  I had a turkey burger one day and went for the single burger at Shake Shack.

Tuesday: Sweet Potato Buffalo Chicken Casserole
I added the hot sauce after cooking so it was not too spicy for the kids.  I would suggest cooking this in two dishes because the potatoes did not cook enough.  It makes a ton so it will be great for lunches.

I can't believe that July is here already!  Something told me this summer was going to go by fast.  Dance is back this week so we need quick meals but keeping them healthy.

Meal Plan: May 31st - June 6th

This week I am implementing the 80/20 rule. With as much as we have eaten dinner out perhaps it is more like the 70/30 rule this week. The 80/20 Rule is something like this: 80 percent of the time your meals are clean eating, no processed, good for you foods, and 20 percent of the time you have the freedom to eat as you please. I typically eat 6 meals a day, breakfast, lunch, dinner and three snacks. That's 42 meals a week. If you are following the 80/20 rule, that would mean that I could relax for 8 meals out of my week. I'm really only telling you this so I don't feel guilty about putting Cheeseburger Pie on the meal plan. No, no honestly, no one can be at 100% all the time, and you are probably going to fall off the "diet" wagon if you feel like you have to be. When I go to the 20% (probably more like 10% for me) I do still consider my portion sizes and I make sure the following meals are back in the 80%.

Meal Plan: May 24th - May 30th

I hope you had a good Memorial Day yesterday.  Our weekend was spent at our daughter's last dance competition of the year and a old school day of playing in the hose and going to the playground.  My daughter dances to the song Imagine and ends with Taps. It is a wonderful tribute to those that have returned from war and those that have not.  The audience always gets emotional but it meant more to watch it this weekend.

Meal Plan: May 17th - May 24th

One way I have learned to trick get my kids to try new meats is by making it look like a hamburger or meatball.  There really isn't a meat that my oldest doesn't like now but the only meat my youngest gets excited about is a cheeseburger or chicken nugget.  She will eat it but it...takes...forever.  This Ode to Ground Meat week.  If it looks like a cheeseburger maybe she will eat it like a cheeseburger.

This is what we are having this week:

Sunday:  Ribeye steaks, Asparagus and Baked Potatoes
These steaks were left-over from a church fund raiser dinner.  We decided to just recreate the whole meal.

Monday: Chicken Parmesan Meatball Casserole and Broccoli (Ground Chicken)

Tuesday: Egg Roll in a Bowl (Ground Pork)

Meal Plan: January 18 - January 24


I have to make a confession.  Even though the post about how great freezing casseroles was true, that wasn't the reason I had casserole freezing day.  This past weekend I surprised my husband with a trip to a beach house with his friends.  I really made the King Ranch Chicken to take with us but needed a cover up as why I was making food a week ahead of time and then not eating it during the week.  The details one must go to surprise someone.  Whew!  Now that the surprises are done I am taking an easy week.  My daughter even asked if she could cook!  Um, yeah!

This week's dinners:



Sunday - Mom's Chili
My mom made chili for football playoff watching.  She used some leftover steak we had from hubby's birthday dinner.  It was yummo!

Monday - Philly Cheesesteak Salad with Potatoes
Still using up the steak (we bought too much). We are having steak, with sautéed peppers and onions on top of salad greens.  Topped with slices of provolone.  The quartered potatoes can go on the side or in the salad.

Tuesday - Cannelloni Bean and Corn Salad Pitas
My girls were given a Cooking Light cookbook, called We [Heart] Cooking, for Christmas from my MIL.  My oldest decided she wanted to meal plan with me and picked to make this recipe.

Wednesday - Chicken Parmesan Meatballs

Thursday - Chili Baked Potato and Salad

Friday - Quesadillas (Kid and Mom)
My hubby is going out with some friends so I thought it would be cool to make this quesdilla recipe that I have been wanting to try.  One of those "no one else will eat it recipes".
Kid's Recipe - Pizzadilla from Cooking Light
Mom's Recipe - Arugula and White Bean Quesadillas with Sun Dried Tomato Cream from Weight Watchers
Ingredients
2 ounces 1/3-less-fat cream cheese
1/4 cup oil-packing sun-dried tomato halves, chopped, drained
2 whole wheat tortillas, 8 inch
1/2 cup Cannellini Beans, rinsed and drained
1 ounce crumbled goat cheese, about 1/4 cup
2 cups baby arugula
Cooking spray
Notes / Directions
1. Combine cream cheese and sun dried tomato in a small bowl; spread every over tortillas. Mash beans with a fork. Spread beans evenly over cream cheese mixture. Top evenly with goat cheese and arugula. Fold tortillas in half.

2. Heat a large skillet over medium heat. Coat pan with cooking spray. Place quesadillas in pan; cook 2 to 3 minutes on each side or until golden and cheese melts. Cut each quesadilla into 3 wedges. Serve immediately.

Holiday Meal Plan: December 21 - December 27


Christmas is here!!  I feel like someone just told me there were 10 days until Christmas and now it is 3 days.  I'm totally almost ready.  Big shout out to Amazon Prime for helping make it all happen.  It's a life saver.

We are celebrating Christmas twice at our house.  Christmas Day with my mom and again on Saturday with my Dad and Stepmom.  This meal plan includes two totally doable and cost friendly holiday dinners.

Sunday - Chicken Nacho Dinner 
I used my Make-Ahead Chicken Recipe for these nachos. I cubed the chicken instead of shredding it.  I also added cumin. These were a great fit for football Sunday and an impromptu Family Game Night.  We played a cute game called Beat the Parents.  A great game for those that are addicted to Trivia Crack.

Monday - Baked Ravioli
I made this last week and frozen one.  To reheat bake frozen at 350 for 1 hour or until bubbly.

Tuesday - Black Bean and Cheese Enchiladas w/ Chicken 
I baked extra chicken when I made the nachos to add this these enchiladas.  Since I'm doing a lot of cooking at the end of the week I decided to buy enchilada sauce instead of making the Ranchero Sauce recipe.  I went with Frontera Sauce because it is all natural and preservative free.

Wednesday - Homemade Sauce with Italian Sausage and Meatballs served over Rigatoni
This is another family vault recipe.  Basically it is sauce with the sausage and meatballs cooked in the sauce. ;)
